If there is someone special in your life that has a gluten allergy the internet is filled with gluten-free dessert recipes. There are so many yummy desserts that don’t include flour and I think those definitely deserve some praise. But when it comes to birthdays nothing beats a cake! White cake is nearly the quintessential birthday treat but if you are gluten intolerant it’s not even an option. BUT IT IS! Check out this bright and fun gluten-free birthday cake I made for my amazing mother-in-law for her birthday.
My MIL happens to be our resident gluten intolerant and every Friday night is Family Fun Night. Like Gilmore Girls. Lucky for us we have had the opportunity to experiment with all kinds of delicious gluten-free recipes. This GF birthday cake is as yummy as it is pretty! Gluten Free White Cake
This simple white cake is perfect for any Gluten Free birthday or holiday!
Dry Goods
- 2 3/4 cups sifted Gluten-Free 1 to 1 baking flour
- 4 teaspoons baking powder
- 3/4 teaspoon salt
Meringue
- 4 egg whites
- 1/2 cup white sugar
Wet Ingredients
- 1 cup white sugar
- 3/4 cup butter
- 2 cups milk
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
Measure sifted 1 to 1 Gluten-Free baking flour, baking powder, and salt; sift together three times. This is key for a fluffy gluten-free cake.
Beat butter until smooth. Gradually add remaining 1 cup sugar, and cream together until light and fluffy. Add sifted ingredients alternately with milk a small amount at a time, beating after each addition until smooth. Mix in flavorings.
In a separate clean mixing bowl, beat egg whites until foamy. Add 1/2 cup sugar gradually, and continue beating only until meringue will hold up in soft peaks.
Add meringue and fold into batter. Spread batter into a greased pan which has been lined on the bottom with parchment paper.
Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Cool cake in pan 10 minutes, then remove from pan and transfer to a wire rack to finish cooling. This cake may also be baked in two 9 inch round pans for 30 to 35 minutes, or in three 8 inch round pans for 25 to 30 minutes.
For a beautiful flat top cake, use wet bake even strips around each pan!

Although I have some experience in baking and pastries, I gained valuable knowledge from her tutorial. Honestly, even if you have no experience with decorating, you can still have a beautiful-looking cake.
